Is it just me or does it seem really difficult to find a chicken salad that everyone loves at the store? I personally love a chicken salad with some nuts & fruit, Seth not so much. When I lived in Ohio I had 2 grocery stores that had chicken salad that I loved, they were both more of a savory chicken salad, still delicious though.
When I moved to North Carolina, it took me awhile & many failed attempts at buying & trying different ones. I did find a fruit & nut chicken salad at Publix that I really liked.
Then I thought, why don’t I try making my own, one that has all the things I love about chicken salad & here it is!
Feel free to make it healthier, by adding greek yogurt and low fat mayo or any substitutes that fit your needs better. By all means this is still healthier than anything you can buy at the store & it’s pretty delicious as well.
Another fun fact is that I used to hate mayo, like despise it and the only thing I would eat is Miracle Whip. Moving to NC and having a husband who likes mayo caused me to change my mind we started using Duke’s and I’ve never looked back. If you haven’t tried it yet, now is your chance.
Feel free to substitute low fat mayo or whatever mayo you prefer. We have this in the fridge so it’s what I’m using. I also love to serve it on a whole grain- seeded bread.
Mix your chicken with mayo & yogurt!
Add in your seasonings, nuts & grapes.
And just like that’s it’s done serve it right away or put it in the fridge.
Healthy-ish Chicken Salad

1 -2 cups of rotisserie shredded chicken (the breast meat)
1/3 cup mayo (Duke’s)
1/3 cup non-fat plain yogurt
1/4 cup walnuts chopped
1/4 cup sliced almonds
1 cup black or red grapes halved
1/4 cup dried cranberries, chopped
1/2 tsp garlic powder
salt & cracked pepper to taste
Directions
- Add your shredded chicken to a bowl, add in mayo & yogurt mix together.
- Add in all other ingredients and stir together.
- Serve right away or refrigerate.
Notes
- I like to serve this up with a tomato, spring mix lettuce and a whole grain bread. Use whatever you like.
