Bourbon Pecan Chocolate Chip Pudding Cookies

I’ve been wanting to make a cookie recipe that combined bourbon & pecans I also wanted to keep them soft. So I decided to combine my original Chocolate Chip Pudding Cookie recipe with a few extras and these cookies do not disappoint.

If I do say so myself, these cookies are better than the originals.

If you like bourbon, pecans, white chocolate chips and soft cookies these are a MUST try!


Use any bourbon you like, we had Four Roses on hand and it made for the perfect pairing.



I think my favorite part of these cookies is how well the white chocolate chip cookies & bourbon blend together, it gives the perfect flavor profile.




Bourbon Pecan Cookies

Ingredients

  • 2 1/4 Cups White Flour

  • 1 tsp baking soda

  • 1 Cup unsalted butter

  • 1/4 Cup white sugar

  • 1 pkg. 3.4 oz vanilla instant pudding

  • 3/4 Cup brown sugar

  • 1 tsp. vanilla extract

  • 2 eggs

  • 1 cup semi-sweet chocolate chips

  • 1 cup white chocolate chips

  • 2 TBS bourbon

  • 1 cup chopped pecans

Directions

  • Mix flour with baking soda set aside. Combine butter, sugars, pudding mix & vanilla in large mixing bowl.
  • Beat until smooth & creamy. Beat in eggs. Gradually, add flour mixture and then stir in bourbon, chips & pecans with a spoon.
  • Drop by TBS onto an ungreased baking sheet about 2 inches apart.
  • Bake at 375 for 8 – 10 minutes
  • Makes about 7 dozen
