My husband sometimes challenges me to make a dish that’s similar to one that he’s had before, his so called “favorites” this pizza is no exception. We spend a lot of time fly fishing in smaller towns and we were told we had to try “Pie on the Mountain”, it’s in a very small town in northern North Carolina. My husband started getting their chicken dinner pizza and now it’s the only one he will ever get.
He challenged me to recreate it, of course that wasn’t necessarily an easy task and it took a few tries to get things just right. I’m gonna warn you this pizza is ADDICTING, you’re gonna wanna eat it all the time! It’s savory, but the balsamic fig drizzle gives it the rtight amount of sweet!

Chicken Dinner Pizza

2-3 TBS of butter
1 tsp minced garlic
1/2 skinless chicken breast chopped/sliced
1 pizza crust I prefer Welka’s classic crust
1 handful of spinach whole leafs
1/2 cup of italian cheese mixture
1/2 cup fresh mozzarella cheese
1/2-1 cup of balsamic fig dressing
salt & pepper to taste
1 TBS Italian seasoning
Directions
- Melt butter in 10 inch non-stick skillet over medium heat, add garlic, chicken pieces, salt & pepper & italian seasoning.Cook until no longer pink.
- Meanwhile, heat oven to 450 degrees. Place crust on a baking sheet, drizzle a little olive oil over it & bake for 5 minutes.
- Once chicken has a nice golden color remove from heat.
- Brush the butter & garlic liquid from the skillet over the crust, add shredded italian cheese, chicken & fresh mozzarella. Bake until golden 10-12 minutes.
- Meanwhile heat balsamic glaze in a pot for a few minutes until it thickens.
- Once pizza has browned, add spinach leaves & drizzle the balsamic fig glaze over top & enjoy!
