Christmas Casserole Cookies

I’m sure you’re thinking what is a Christmas Casserole Cookie? Well it’s just how it sounds it’s made in a casserole dish & rolled into a cookie.

For as long as I can remember my mom has made these cookies, she loves them because of the nuts & coconut, which are some of her favorites. As a kid these weren’t my thing, but now they’re a big with me & for anyone I make them for.

My mom has literally been making these for so long that she won Grand Prize in 1974 for this recipe in The Coshocton Tribune Cookbook Contest. Pretty cool huh?


Simple ingredients! Combine them all and bake!

Pull casserole out of the oven & stir with a wooden spoon- has to be wooden the recipe says so! 

Let them cool & roll them in sugar! Voila, Christmas Casserole Cookies are born!

On the inside they are ooey & gooey, you can taste the almond & vanilla extract, the chewy-ness of the coconut, walnuts & dates makes this cookie perfect.








Christmas Casserole Cookies

Ingredients

  • 2 eggs

  • 1 cup flaked coconut

  • 1 cup chopped walnuts

  • 1 cup sugar

  • 1 cup chopped dates

  • 1 tsp. vanilla

  • 1/4 tsp almond extract

Directions

  • Preheat oven to 350.
  • Beat eggs well, add sugar gradually. Beating until fluffy.
  • Stir in remaining ingredients.
  • Pour into an ungreased 2 quart casserole dish
  • Bake at 350 for 30 minutes, remove from oven & while hot stir with a wooden spoon.
  • Let cool, form into small balls about tablespoon size and roll in sugar.
