Looking for an easy brunch idea? These ham & spinach pies are not only easy to make, but a great additional to any brunch whether it be as an appetizer or as the main dish.
The other great thing about these pies is that you can make them entirely your own, add mushrooms, bacon, eggs, the options are limitless when it comes to these pies.
I think they are best right out of the oven, of course be careful not to burn your mouth because that cheese is hot, but oh so delicious!!
Ham & Spinach Puff Pies

1 sheet puff pastry-thawed
1/2-1 cup of diced ham
3/4 ricotta cheese
1 cup shredded mozzarella
2 TBS milk
salt & pepper
olive oil
1 shallot minced
1 TBS garlic minced
4 cups spinach
1 egg
Directions
- Preheat Oven to 400 degrees and line a cookie sheet with parchment paper.
- Combine ham, half the mozzarella, ricotta, milk and salt & pepper in a bowl.
- Place a few drizzles of olive oil into a skillet add shallots & garlic until fragrant and then add spinach until wilted. Add to the bowl with cheeses & ham.
- Divide the frozen puff into 4 squares. Spoon the filling into the center of each, then fold up all the sides in a circular pattern. Brush the edges of dough with beaten egg.
- Spinkle with the rest of the mozzarella and bake for 15-20 minutes or until edges are brown & cheese is bubbly.
