Most of my favorite dishes involve seafood, which is funny because I didn’t grow up eating seafood, living in Ohio we were far from the ocean. So maybe that’s why I’ve come to love it so much in my adult life.
I’m all for a creamy seafood pasta, but I also love the refreshing aspect of incorporating lemon & butter to make a delicious sauce. Not only is it simple to make it’s also a quick dish and we all know how we love an easy & quick meal.

Lemony Garlic Butter Shrimp Scampi

1/2 cup unsalted butter
1 lb shrimp, peeled & deveined
2 cloves garlic minced
1 shallot, minced
1/4 tsp red pepper flakes
1 TBS lemon zest
1 TBS lemon juice
2 TBS fresh Parsley
dash of salt & pepper
8 oz linguine pasta
1 cup shredded parmesan cheese
Directions
- Cook linguine to package directions
- Melt butter in a large skillet over medium heat, add garlic, shallot, and red pepper flakes. Stir until aromatic.
- Add shrimp, season with salt and pepper. Cook on each side about 3 minutes until pink.
- Stir in lemon juice and zest. serve over linguini sprinkle with parsley & parmesan cheese.
