Pickled Red Onions

Do you love relishes and toppings like I do? This recipe is one you’ll definitely want to add to your stockpile! If you have red onions on hand in your garden, this is a great way to use them. If you aren’t growing any, store-bought works fine, too! The other ingredients you likely have on hand, making this recipe super convenient and easy to throw together. You just need to have the patience to let it marinate for a few weeks.

Pickled Red Onions

Make this simple relish topping to add a little flavor to your next meal!

Ingredients

  • 2 red onions, sliced thinly

  • 2 cups white vinegar 5%

  • 2 cups water

  • 1/3 cup white sugar

  • 2 TBS sea salt

Directions

  • Thinly slice onions, divide between 3 (10oz jars).
  • Heat vinegar, sugar, salt and water over medium heat until sugar dissolves. Let cool and pour over onions. Let cool at room temperature and then refrigerate for 2 weeks. 
  • Eat once they turn bright pink. 

Notes

  • Can add garlic cloves or peppercorns if you wish.
