Skillet Pot Pie

I love a pot pie, actually even better than that I love a cast iron skillet pot pie, it’s a one pan meal, less mess & easy clean up. It’s perfect for those cold nights, a perfect comfort meal that warms you up from the inside out.

I made this after Thanksgiving to use up leftover turkey, so with Christmas just 1 day away I’m sure there will be lots of leftover turkey & possibly even chicken & we all need ideas on what to do with all of it. Well here is your answer grab some leftover veggies & meat & throw it in a skillet. I also short cut the pie crust process & buy a Pillsbury pie crust they taste great & it makes this dish 5x quicker.


Mix all those glorious ingredients together, throw a crust on top & stick it in the oven.

What you get is this beautiful golden deliciousness.. serve it up & enjoy!

Ingredients

  • 1 Pillsbury pie crust

  • 2 TBS unsalted butter

  • 1/2 cup chopped onion

  • 2 tsp. minced garlic

  • 1 cup sliced carrots

  • 1 cup frozen peas

  • 3/4 cup celery diced

  • 1/4 cup all purpose flour

  • 1/1/2 tsp dried thyme

  • 1 tsp salt

  • 1/2 tsp ground black pepper

  • 2 cups chicken broth

  • 1/2 cup milk

  • 2-3 cups of shredded chicken or turkey

  • 1 egg & TBS water for egg wash

Directions

  • Preheat Oven to 375.
  • Remove Pie crust from refrigerator and sit on counter.
  • Add butter to cast iron skillet about 10-12 inches. Add onions & garlic & saute until soft 2 minutes, add carrots & celery another 2 minutes. Add peas for the last minute.
  • Add flour, thyme, salt & pepper cook for about 3 minutes.
  • Add the chicken broth & milk and bring pan to a boil, bring to a simmer and let mixture thicken about 5 minutes.
  • Add chicken or turkey and cook for an additional 1 to 2 minutes.
  • Lay the crust over the top of the skillet, pinch edges to edge of the pan to seal in all the goodness below.
  • Take your egg wash mixture 1 egg + 1 TBS of water or milk and brush over the top of the crust. You may poke a few vent holes if you wish, but they’re not necessary.
  • Bake in oven for 30-40 minutes until crust is golden brown.
