Mom's Classic Potato Salad

Ingredients
  

  • 3 lbs yellow potatoes, diced
  • 2-3 hard boiled eggs, diced
  • 3-4 Sweet pickles, diced
  • 1/2 cup mustard
  • 1 cup miracle whip
  • 1-2 TBS apple cider vinegar
  • Salt & pepper

Method
 

  1. Boil the potatoes for around 15 minutes or until fork tender. Once cooked & cooled, peel the potatoes and cut into 1.2 chunks.
  2. In a medium to large size bowl add in the potatoes, eggs & pickles.
  3. Then add in your miracle whip, mustard and apple cider vinegar. Add salt & pepper to taste.
  4. Store in the refrigerator.

Notes

Onions & Celery optional
 
This recipe is a lot by feel, so if it's too dry you'll need to add some more miracle whip.
