Chukkar Burrito Bowl

Burrito bowls are always easy to make & you can customize them to however you like. I had some Chukkar (wild game bird) left over in the freezer and this is the perfect way to use it up. Don’t worry if you don’t have Chukkar, you can use quail, pheasant or good ole chicken.

Ingredients can be served warm or cold, either way it tastes great! Be sure not to over cook your bird, because no one likes a dried bird on their burrito bowl.

Ingredients

  • 2 Chukkar breast & legs (any gamebird or chicken will do)

  • 4 TBS of your favorite mexican seasoning

  • 1 pkg of cilantro rice cooked to package directions

  • 1 cup cooked black beans

  • 1 cup avocado sliced

  • 1 cup tomatoes chopped

  • 1 cup lettuce

  • 1 cup of colby jack shredded cheese

  • 1 cup of sour cream

  • 2 TBS lime juice

  • Cilantro for garnish

Directions

  • Add Chukkar to a Ziplock bag, add some olive oil and the Mexican seasoning. Let marinade in fridge for an hour.
  • Once that hour is up, heat your grill. Once heated add your Chukkar to the grill, grill on low to medium heat for 8 minutes or so and then flip. Be sure not to overcook the meat, as this type of bird can dry out easily. Once cooked let cool and shred the meat.
  • Cook your cilantro rice per package directions.
  • Now the fun part, assemble your burrito bowl add rice & beans, Chukkar, top with lettuce, cheese, tomato, avocado, cilantro. Mix the sour cream with lime juice and add that on top!

Notes

  • Feel free to add any toppings or garnishes that you prefer.
