Venison Bacon Meatloaf

It’s that time of year where we are all looking for ways to use up our leftover venison ground meat and most of us want different ways to use it then chili or stew.

I know not everyone loves meatloaf, but I do it’s a comfort meal and such a great meal a cold night or a quick fix.

Meatloaf is one of those dishes where it can be served by itself or with mashed potatoes or my all time favorite a baked potato. You can also create any meatloaf you want if you don’t like bbq sauce substitute ketchup, I like both, but I’m a big fan of dipping my meatloaf in ketchup.

So pull that ground meat out of the freezer tonight & throw this together for dinner tomorrow.

Venison Bacon Meatloaf

Ingredients

  • 2 lbs ground venison

  • 1/2 medium onion chopped

  • 1 package of onion soup mix

  • 2 eggs

  • 2 slices of bread soaked in milk or 1/2 cup bread crumbs

  • 1/4 cup parmesan cheese

  • 3-4 strips of bacon

  • salt & pepper to taste

  • Favorite BBQ sauce to drizzle on top

Directions

  • Preheat oven to 350 degrees.
  • Mix all of the ingredients together in a bowl except the bbq sauce & bacon.
  • Place a baking rack on top of a cookie sheet, line it with foil.
  • Shape your ingredients into a loaf, place the bacon strips over the meatloaf and brush with bbq sauce.
  • Place into the oven and bake for 1 hour
