Pumpkin Cake with Cream Cheese Frosting

Quick – run to the store and grab a box of spice cake mix! Come to think of it, you better grab 2 or 3… is 7 boxes too many? I’m asking for a friend, of course 😉 Actually, it’s me, I’m that friend! Now that may seem like a lot of cake mixes, but they can be difficult to find. So, when I find them, I grab them! The great thing about this dessert is that it’s easy to make, pleases any pumpkin lover, and is full of fall flavor. I also have to add this cake is soft, fluffy, and your favorite word… moist (sorry, it really is!)

Who doesn’t love an old-fashioned pumpkin roll? But if you’re like me, you don’t always want to go through the hassle of making one. Do you like pumpkin rolls, but don’t want to go to the trouble of making one? Well if you make this cake you’ll realize that it seriously tastes just like a pumpkin roll.

This may be a simple cake, but you can add some flair to it. You can add some cinnamon sticks, fake leaves, or acorns. Perhaps use a stencil and dust on some cinnamon. No matter how you decorate it, it’ll still taste amazing!

Now I can’t take 100% credit for this recipe, as I first heard of this recipe through Living with Landyn. But baking is one of those things where everyone has their methods and sometimes the same recipe can come out a little different! You’ll just have to make it yourself, and see how it turns out – enjoy!






You can get super creative with the decorating or just put some cinnamon sticks on top. 


Pumpkin Cake with Cream Cheese Frosting

Ingredients

  • 1 box of Spice Cake Mix (Betty Crocker or Duncan Hines)

  • 1 cup sour cream

  • 1 (15oz) can of canned pumpkin

  • 1/4 cup of olive oil

  • 3 medium-large eggs

  • Cream Cheese Frosting
  • 1 (8oz) package cream cheese

  • 1/4 cup of butter softened

  • 1 tsp vanilla extract

  • 2 cups of powdered sugar (sift after measuring)

  • 1 tsp cinnamon

Directions

  • Heat oven to 350 degrees.
  • Combine the cake mix and other ingredients in a mixing bowl and mix.
  • Pour into a greased 9 x 13 rectangle pan.
  • Bake for 28-30 minutes (until a toothpick comes out clean in the middle of the cake). Let cool completely.
  • Combine all ingredients for frosting and spread onto cooled cake. Refrigerate and enjoy!

Notes

  • This recipe can be made in any size pan. Make 2 8×8 square pans to take one to a party and save one for home. Or, make it into cupcakes!
