This is a super simple recipe, but it’s a delicious one and great for any brunch or breakfast. Have you ever tried a quail egg? They taste just like a chicken’s egg, except they are 1/3 of the size and oh so adorable. I love the simplicity of quail eggs, they’re a delicious bite!
Pair with some breakfast meat, fruit, and orange juice and you’ve got yourself a complete and yummy breakfast! As far as finding the perfectly ripe avocado – may the odds ever be in your favor!
Avacado Toast with Quail Eggs

1 piece of Sourdough bread, toasted
1/2 of a ripe avocado, mashed
1 tsp of everything bagel seasoning
Salt & pepper for seasoning eggs
2-4 quail eggs, cooked over easy
Directions
- Preheat a non- stick skillet over medium heat, spray with olive oil.
- Cook quail eggs about 1-2 minutes per side, be careful not to overcook – they cook fast!
- Toast your sourdough in a toaster (any bread will do, but I prefer the crunchiness of the sourdough and it holds up well to the avocado mash).
- Add mashed avocado to the sourdough toast, sprinkle with bagel seasoning & add eggs. Enjoy!
Notes
- They make scissors specifically for opening quail eggs. These are a lifesaver and will save you from breaking your egg yolk or getting eggshells into your eggs. The eggshell is super tough.
