The Winter months can mean less access to fresh produce, or produce that’s well boring. Anyone trying to eat healthier, but is sick and tired of salad after salad.
Yep, I’ve been there and I’ve started realizing that I love Winter salads, salads that include fruit whether it be apples, pears or strawberries. I love including pecans or walnuts and Feta cheese is my go to.
Fruit balsamic vinegars have also become a favorite of mine whether it’s fig or this Cinnamon Pear balsamic vinegar from Staunton Olive Oil Company, my MIL took me there a year or so ago when we went to visit. She thought I would love it & she was right, there are so many olive oils to choose from as well as balsamic vinegars which are my personal favorite and back before the pandemic you could actually go and taste them all.
As for not being able to find fresh produce in the Winter months, I have to say Aldi has never steered me wrong. Everything in this recipe was sourced from there other than the balsamic vinegar.
The great thing about this salad is that it’s easy to make & you can play fast & loose with it. Add your favorite toppings & dressings.
