Hearty Breakfast Burritos
There’s just something about a breakfast burrito that feels like the ultimate comfort food—warm, filling, and made to be customized. These breakfast burritos are a longtime favorite in our house and perfect for slow weekend mornings, feeding a crowd, or prepping ahead for busy weekdays. Loaded with bacon, fluffy eggs, crispy tater tots, and melty American cheese, all wrapped up in flour or corn tortillas, they’re simple, satisfying, and always a hit. I’ve made different versions of breakfast burritos over the years, but I think this one just might be my favorite. I never knew how much I loved a breakfast burrito until my father-in-law started making them for us when we would visit.

Ingredients
- Bacon, cooked and chopped
- Eggs
- Cooked Spanish rice
- Tater tots, cooked until crispy
- American cheese slices
- Flour tortillas or corn tortillas
- Salt and pepper, to taste
- Salsa Con Queso or Blanco
Optional add-ins: salsa, hot sauce, sour cream, avocado, or green onions

Instructions
- Cook the bacon
Cook bacon until crispy. Remove from the pan, let drain, then chop into bite-sized pieces. - Prepare the tater tots
Bake or air-fry tater tots according to package instructions until golden and crispy. - Scramble the eggs
Crack eggs into a bowl, season lightly with salt and pepper, and scramble in a skillet over medium heat until just set. - Cook the rice
Cook the Spanish rice in a small saucepan per package instructions. - Assemble the burritos
Warm the flour tortillas slightly so they’re easy to fold. Layer flour tortilla, slice of cheese, corn tortilla, rice, eggs, bacon, tater tots, and a slice of American cheese down the center of each tortilla with a drizzle of Queso Blanco Cheese. - Wrap and serve
Fold in the sides and roll tightly. Serve warm, or toast briefly in a skillet to melt the cheese and crisp the tortilla.
Tips & Variations
- Make ahead: Assemble burritos, wrap tightly in foil, and refrigerate or freeze. Reheat in the oven or microwave.
- Extra crispy: Toast the wrapped burrito in a skillet or griddle for a golden exterior.
- Switch it up: Try sausage instead of bacon, or add peppers and onions for extra flavor.
- Tortilla choice: Flour tortillas are softer and easier to wrap, while corn tortillas add a classic, hearty texture.

- Using a large sheet pan, bake your fries per the package directions.
- Brown your burger and add the cowboy seasoning.
- Chop your toppings, and make your smash sauce.
- Once the fries are baked & crispy, add the burger on top and your slices of American cheese. Put back in the oven until cheese is melted about 2-5 minutes.
- Add the rest of your toppings, lettuce, tomatoes, pickles, onions, and drizzle smash sauce on top of them.
