In this house, we are big fans of fajitas, quesadillas, and shrimp! Naturally, I got a crazy idea to make a fajita shrimp quesadilla (that’s a mouthful – both to say and to eat!) and guess what? It’s SO dang good!
Sometimes it’s nice to find a good recipe that’s out of the norm and is different than the status quo. As I mentioned, we love chicken fajitas and quesadillas, but sometimes it’s good to mix it up! In this case, I married elements of a quesadilla and fajitas and it did not disappoint. Feel free to change the amounts of shrimp, onions, and peppers, based on how many quesadillas you want to make.

Fajita Shrimp Quesadilla

1lb of shrimp
1 small-medium onion, sliced thin
1-2 bell peppers (red & green), sliced thin
Olive oil
2 TBS fajita seasoning
1 cup Mexican cheese
Large flour tortillas (burrito size)
Cilantro lime dressing
Sour cream, if desired
Directions
- Heat 1 TBS of olive oil in a skillet. Sprinkle seasoning onto shrimp and add to heated pan.
Cook 4 minutes or so on each side. Once you see them turn pink, flip them over. - Remove shrimp, add onions and peppers to pan, and cook until they’re soft. Add shrimp back in.
- Assemble quesadillas by adding handful of cheese to one side of tortilla, add shrimp amd veggie mixture overtop. Fold over tortilla.
- In another skillet over medium heat, add small amount of olive oil and lay folded tortilla onto it and cook until crisp, a few minutes, then flip over to brown the other side. Watch it and
be careful not to burn the tortilla. Repeat this step for as many quesadillas as you want. - Serve up with a delicious cilantro lime sauce or sour cream with a squeeze of lime!
Notes
- Feel free to swap shrimp for any other protein!
