The Best & Easy Huckleberry Strudels

Have you ever had a hankering for a delicious breakfast treat that’s both fun and flavorful? Well, look no further because today, we’re diving into the wonderful world of huckleberry strudels!

Now, strudels are already a classic breakfast favorite, but when you add the fruity goodness of huckleberry jam into the mix, it takes things to a whole new level of yumminess. These delectable pastries are perfect for those mornings when you want something a little extra special without putting in a ton of effort. It’s like having a bakery right in your own kitchen!

But what exactly is a huckleberry, you might ask? Well, huckleberries are small, round berries that are often compared to blueberries. They have a slightly tart and sweet flavor that adds a unique twist to any dish. When combined with the buttery pastry and sweet icing of a toaster strudel, huckleberries create a flavor explosion that will have your taste buds dancing with joy.

I first discovered huckleberries on our honeymoon out in Montana, huckleberries are a wild berry, found in mountainous regions, such as Washington, Idaho, Montana, I believe there are a few places on the East coast as well like Maine that may have them. They have a season from mid-July through mid- September, if you’re lucky enough to be in one of those regions and know where to find them, you’ll be in for a treat. Watch out for the locals i.e. bears, they also enjoy huckleberries.

I’m attempting to grow garden huckleberries at our farm, while they won’t taste nearly as good as the wild berries, I’m hoping they’ll at least fill that craving!

Now for those of us not lucky enough to live where the berries grow wild, you can score some huckleberries online I found a great resource in Northwest Wild Foods. Any other berry jam will work too!

These pastries take no time at all to make, and anytime you can bake with puff pastry you’re in for a real treat. It’s also a fun idea to dye the icing and add some colorfulness to the dish! If you don’t have huckleberry jam on hand, use blueberry, mixed berry, strawberry, any berry jam will do.

Huckleberry Strudels

Ingredients

  • 2 sheets puff pastry-thawed

  • 2/3 cup of huckleberry jam or other berry jam

  • 1 egg

  • 2 tsp cornstarch

  • 1 TBS water

  • Icing
  • 1 1/2 TBS butter, melted

  • 1 cup powdered sugar, sifted

  • 1 1/2 TBS half & half or milk

  • 1/4 tsp vanilla extract

  • 1/8 tsp almond extract

  • 1 -2 drops of food coloring if desired

Directions

  • Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
  • Roll out puff pastry flat & cut into 6 equal rectangles. In a small bowl whisk together jam & cornstarch. Spoon about 1 to 1 1/2 TBS into the middle of 3 of the rectangles. Leave a rim around the edges.
  • Whisk together the egg wash mix (egg & water). Brush the egg wash around the edges.
  • Layer the remaining puff pastry rectangles onto the pastries with jam. Press the edges with a fork to seal. Repeat this for all of them.
  • Brush the tops lightly with egg wash and bake until golden brown, abut 20 minutes.
  • Let them cool.
  • For the icing whisk all the ingredients together in a bowl until well blended. Once pastries are cooled drizzle the icing over the puff pastries.

Notes

  • You can use any berry jam you have on hand.
